Chefs Daniel Arias and Isidro Marquez-Castillo have revamped the menu at Peyote with a broadly Latin American interpretation that is at once classic and creative. The brunch menu features chilaquiles (with a recipe inspired by the dish Arias’ wife made for him on their first date), challah French toast with amaretto mascarpone, shrimp tacos, and a creative cocktail menu with chorizo margaritas, pear gin and tonics, and spicy bloody marys. Brunch is served Friday, Saturday, and Sunday.

Kim Canteenwalla and Elizabeth Blau’s restaurant Honey Salt serves brunch from 10 a.m. to 2:30 p.m. Saturdays and Sundays with a mix of breakfast fare, sandwiches, pizzas, and salads. Look for bottomless bubbles (mimosas and Bellinis for $19) and bloody marys as well as a Dutch pancake, French toast, and breakfast poutine. You can also enjoy Honey Salt’s beloved fried chicken on eggs Benedict or on a sandwich with a brioche bun.

While you can find avocado toast and breakfast sandwiches on the menu, you’re better served going in a group to share a three-pound lobster frittata, the seafood tower, or — if you really want to splurge — the Ultimate Bloody Mary which comes piled high with all manner of grilled cheese, bacon, and more for $995. Once the lights dim, the fog machines start, and the bottle girls slip into banana costumes, your chair becomes better suited for standing and dancing than for sitting.

Head to Chica at the Venetian from 8:30 a.m. to 2:30 p.m. on Saturdays and Sundays and until 3 p.m. Monday through Friday for options including a basket of arepas, strawberry guava waffles, a Cubano sandwich, and bunuelo doughnuts. Therecently renovated spaceinside the Venetian features a mural from artist Daniel Osorno and a canopy of greenery for a modern vibe at any time of day. Two batch cocktails serve parties of 8 or more, starting at $120.

From 9 a.m. to 2:45 p.m., Friday through Sunday, brunch dishes include caprese frittatas, cavatelli pasta, and smoked salmon paninis. Start with a pastry basket for $14.99 and, for a splurge, split the seafood tower of shrimp cocktail, oyster crudo, and crab cocktail for $45.99.

Lago’s three-course brunch at the Bellagio starts with a basket of pastries. Then customers can choose a dish from the antipasti menu such as raviolone, a pasta pocket filled with truffle ricotta and topped with an egg yolk and summer truffle butter sauce. Then order Serrano’s Italian twists on brunch staples such as eggplant parmesan Benedict; Nonna’s frittata made with baked eggs, fresh vegetables and mozzarella; and pizzetta with guanciale, ricotta and egg yolk. For dessert, there’s panettone pudding or Nutella crespelle. Brunch is served Friday through Sunday from 10 a.m. to 2:30 p.m.

Kassi Beach House at Virgin Hotels serves a daily brunch from 11 a.m. to 3 p.m. with a menu that offers something for everyone. There are ricotta pancakes, avocado toast, and a breakfast sandwich for the breakfast eaters, steak frites, Neapolitan pizzas, and pastas for the lunchers, and hamachi crudo, grilled octopus, and salads for the health-conscious eaters. Add bottomless rosé for $45 per person and request a table by the pool for a beachside vibe.

The elegant dining room at Bardot Brasserie transports you right to Paris, where you start your brunch with a pastry basket stacked with canelé, kouign-amann, chocolate croissants, and other sweet treats. Then you could go for an omelet with gruyere and herbs, or a grand seafood platter with oysters, shrimp, lobster and more. A selection of breakfast Benedicts are also available, alongside a steak burger, quiche, and more.

DW Bistro offers a mix of Jamaican and New Mexican cuisine and those influences carry over to brunch, when mid-morning diners can indulge in New Mexico red chile pork bowls, jerk pork hash, and french toast souffle. Just add a mimosa and a chocolate croissant or blueberry scone from the pastry basket.
