Anthony Bourdain has long loved Seattle: Four years ago, the food celebritytoured the Emerald Cityand declared that it had “one of the best and most interesting food scenes in America” on the final season of his TV showThe Layover.Last fall, Bourdainreturned in the penultimate episodeof CNN’sParts Unknown, Season 10, and despite complaints about tech bros, he made a similarly bold proclamation about Seattle: “It’s pretty damn awesome,” Bourdain said. “Way ahead of the rest of the country in unbridled enthusiasm for good ingredients and good stuff.”

“Fish and Chips is the thing, right?” Bourdain asked. Yes, this unpretentious Fremont institution is a knockout for surprisingly fresh pub fare, particularly the fish and chips. ”Pacific Inn Pub is a holdout. A place that has so far managed to resist the temptation to appease the invaders.”

While the original Fremont location Bourdain and his Geekwire cohort dined at is closed until 2019 for new construction, diners can head down to Revel’s temporary space in South Lake Union to indulge in cilantro noodles, kimchi pork belly pancakes, and short-rib dumplings.

It wouldn’t be a trip to Emerald City without some green to help build up an appetite, and Bourdain called the options “mind-boggling” at this strip-mall cannabis dispensary in Renton.

Bourdain admitted he was pretty stoned for this dinner — Exhibit A: his case of the giggles — but that didn’t take away from the stunning visuals of fried cauliflower with tarrator and dolmeh stuffed with sweet-and-sour rice and barberries. “Mamnoon Restaurant is a modern take on traditional Syrian and Lebanese food. And it’s done well,” Bourdain assessed.

Taylor Shellfish Oyster Bar

“泰勒Shellfish Oyster Bar in Pioneer Square is old-school...with three restaurants in town, they know what they’re doing,” Bourdain said. Indeed, the Shelton-based company is America’s largest producer of farmed shellfish and has more than 100 years of experience in the seafood business, so whole fried smelts and plenty of freshly shucked oysters made for a happy Bourdain and crew.

North Star Diner and Shanghai Room

An obsession with Pacific Northwest murders is not required to enjoy Greenwood’s (formerly) best-kept secret, a combination 24/7 diner and karaoke lounge with shockingly good cocktails and bartenders skilled enough to carry a Prince tune while simultaneously pouring beers. But according to Bourdain, who’s borderline obsessed with the serial killers of the PNW, “Crab, bacon, and melted cheese is, when discussing dumpsites and ligature marks, a must.”

Bourdain passed on the consistently packed patio, opting instead for a seat at the bar at this candlelit Ballard establishment. He gave it his seal of approval, complimenting Ocho’s “generous drinks and Spanish-style tapas.”
