Whether the heat level is low or “insane,” the wings hit with spice and a whole lotta nice — and sure, you could get them naked, but consider at least a medium coating, described as “Seattle hot.” In addition to wings, grab some cocktails, beer, and wine at this low-key hangout.

Despite lacking a permanent home, Vindicktive Wings is easily one of Seattle’s best destinations for Buffalo wings; checkInstagramfor pop-up info, including regular dates at Rose Temple on Capitol Hill. Bartender Dominick Minichiello couldn’t find Buffalo chicken wings like the ones he grew up with in Western New York, so he decided to do something about it. The concise menu centers wings cooked until they’re perfectly crunchy, tossed in a tangy and spicy house-made Buffalo sauce, and served with a chunky blue cheese dip. While other sauces like garlic-parmesan are also an option, ranch dip isn’t — Minichiello feels strongly that it has no place here.

Eric and Sophie Banh’s Ba Bar, with hip locations in South Lake Union, University Village, and Capitol Hill, serves some of the most satisfying Vietnamese food and cocktails in the city, including Vietnamese-style wings. The gluten-free batter crunches loudly, the sauce is sticky with caramelized sugar, and a dip in the accompanying nuoc cham adds a funky, tangy finish.
