David Grutman Debuts Three Restaurants Inside the Former Firestone Garage

Boasting a modern-day diner, a sushi and fried chicken restaurant, and a whimsical dessert shop

Continuing to expand his footprint on South Florida’s hospitality world, David Grutman’s Groot Hospitality has officially debuted three new restaurants inside the former Firestone Garage on Miami Beach. The restaurants includeWinker’s Diner, an updated take on a retro diner;Sushi Fly Chicken, a hybrid fried chicken and sushi restaurant with a “hidden” entrance; and the sweet-focusedToothfairy.

Named after Grutman’s family cat, Winker’s is his take on a neighborhood diner. The 240-seat restaurant serves up dishes like cinnamon roll French toast, smoked salmon challah, large deli-style sandwiches, and hearty main dishes like prime rib, vegan chicken pot pie, fish and chips, and coconut shrimp, along with desserts like custom milkshakes and banana pudding. The space features an Art Deco vibe with teal leather booths, pastel walls with sunburst panels, bronze hardware throughout, and a large center bar with a floating marquee sign.

At first glance Sushi Fly Chicken looks like a takeout restaurant with a small nondescript storefront that does indeed fulfill takeaway and delivery orders. But behind the takeout counter is a door that leads to a sleek dining room with a neon and steel-clad bar backlit by a 75-foot-long mural by the Miami-based artist Santlov. Inspired by “hidden” bars found around Tokyo, the restaurant specializes in fried chicken served Southern, Thai, or Korean style, along with dishes with flavors found throughout Asia like lobster prawn toast, Peking duck bao dumplings, mixed nigiri platters, and a omakase option. Plenty of Japanese whiskys are on hand along with drinks like a yuzu margarita and a Szechuan peppercorn lychee martini.

For Toothfairy Groot tapped pastry chef and partner Dallas Wynne to lead the kitchen. Wynne, who has ran some of Miami’s best dessert programs including those atStubborn SeedandAriete, created a menu filled with nostalgic confections. Think s’mores Twinkies, oatmeal cream pies, cake pop candy bars, funfetti cake, deep dish key lime pie, brownie cheesecake, in addition to a wide range of soft serve. Her beloved snickerdoodle cookies make an appearance on the menu being updated with the addition of brown butter and hazelnut. The Instagram-friendly space has ombre pink and blue walls, marble counter tops, and many of the bright desserts prominently on display.

All three restaurants are located at 1575 Alton Road. Winker’s Diner is open from 6 p.m. to 11 p.m. Sunday to Thursday, 6 p.m. to midnight Friday and Saturday, and for brunch service from 10 a.m. to 4 p.m. on Saturday and Sunday (launching September 18). Sushi Fry Chicken is open 6 p.m. to 11 p.m. Sunday to Thursday, and Friday and Saturday from 6 p.m. to 5 a.m. Toothfairy is open 9 a.m. to 10 p.m. Sunday to Thursday, and 9 a.m. to 11 p.m. Friday and Saturday.
