Burnt ends are traditionally something that can be found in Kansas City barbecue, so anybody who's spent time there will likely know that they are the really tasty pieces of meat cut from a smoked piece of brisket. As if brisket wasn't flavorful enough, the burnt ends are literally the cornerstone of flavor and smoke on meat. That's about enough information one needs to understand why a lot of the local places that offer burnt ends also list them with the caveat "until supplies last" or something to that effect on the menu. In other words, if burnt ends can be found at a restaurant, they won't always be available for long on account of their popularity.

While DC is technically below the Mason Dixon Line, it isn't exactly the barbecue capital of the U.S. But that doesn't mean there aren't burnt ends to be found at a handful of restaurants that refuse to shy away from Kansas City-style offerings.
