At its core, Mediterranean cooking celebrates simplicity and quality. Maybe that’s why burrata is such a common sight at cafes and trattorias throughout D.C. The fresh cheese is a marriage of soft mozzarella and creamy stracciatella, all melded together in a delicate ball.

Burrata is often a blank canvas for chefs, who adorn it with fresh herbs, roasted vegetables and fragrant sauces. Sometimes the dish sings with nothing more than a drizzle of olive oil and some salt and pepper.
