Penn Quarter’s Taco Bamba Pop-Up Is Staying Put

Restaurateur Victor Albisu’s lunch experiment has tripled his business

Taco lovers worried about missing chef Victor Albisu’s pop-up in Penn Quarter can relax: hisTaco Bambalunch service is sticking around atDel Campo’s bar for the foreseeable future.

Washington Business Journalreportsthat the temporary version of Albisu’s suburban taco standoriginally projectedto wrap up its residency in D.C. at the end of this month will now remain in place until Albisu decides otherwise.

“Five years ago I would have said I don’t want to cross these streams, but now we’re living in the time when the business can be inconsistent,” the restaurateur toldWBJabout the crossover event that introduced the taco- and torta-slinging operation hestarted in Falls Church, Virginia, to the meat lovers he’s courted at the South American-style grill he installed at 777 Eye Street NW.

Albisu grew the Taco Bamba brand in 2017, branching out to Vienna, Virginia, and most recently toSpringfield, Virginia. He’s expressed interest in bringing a brick-and-mortar Taco Bamba to D.C., but has not yet found a suitable location.
